    I’ve owned two of these knifes before and I was more than happy with them for the price. I recently had to purchase a new one and when compared to the other two this is clearly a different knife. This on has a less grooved handle so there isn’t much to wrap you hand around. It also has a visible thinner blade and is SIGNIFIGANTLY lighter. This feels like a cheaper version of the knife I’ve loved for years. I will be sending this knife back as I am completely dissatisfied with it. It’s a shame these where wonderful knifes for the price point that I had enjoyed cooking with for years before. Strongly do not recommend.

    For months, I had been telling my wife that I wanted to get a chef''s knife. She told me that we didn''t need one because we already had one (Faberware). I explained to her that a "real" chef''s knife would make the existing knife in our cupboard look like a plastic knife. Well, maybe I exaggerated, but not by much.

    This knife came protected in a plastic blisterpak that was easily removable. The handle has a very comfortable grip and the material is slightly textured so that even having water on this knife means that it won''t slip out of your hands. Does it look fancy? Nope. Does it work pretty well as a chef''s knife? YES!

    When comparing this against our current Faberware, there is just no comparison. The Victorinox truly made the Faberware feel like it was a plastic knife. My wife pulled out some tomatoes and sweet potatoes to do the test with me. First of all, we cut up a sweet potato using the knives side by side. The Faberware had to chop into the potato like a meat cleaver. She used the Victorinox next and it cut into the sweet potato with a lot more ease, but not enough to convince her just yet. She said that they were about the same. I told her she probably wasn''t using it right since she also chopped the sweet potato with the knife with the same force as if it were a meat cleaver. I told her she should use a rocking motion like the way chefs do it on TV. No matter. Next, she sliced into some tomatoes with the Faberware and it looked like she had no problem. She then did her best to cut a thin slice from the tomato. The slice was maybe 1/4 of an inch. Next, she took the Victorinox and it sliced through the tomato like butter. Her face brightened, but what came next was even better. She was able to cut a slice of the tomato so thin that it was like wax paper. She was so pleasantly surprised that she kept cutting thin slices for about 5 more minutes. She went back to the Faberware to try to do the same and just couldn''t. The knife slipped from the tomato whenever she tried to slice it as thinly as the Victorinox. To try to make it a fair fight, I sharpened the Faberware several times to make sure it wasn''t under-performing due to a dull blade. Same result. The Faberware couldn''t hold a candle to the Victorinox in our tomato cutting tests. She held the Victorinox in her hand and remarked, "So this is what chefs use in the kitchen, huh?" I said, "Yeah, and you should listen to me more." Long story short, she was amazed and approved of my purchase. Get this knife if you have been suffering from "plastic" knife syndrome.

    Blade is roughly sharpened on one side (visibly jagged) and "curved" instead of bevel edged on the other side.
    Who manufactures a knife that way? Can''t cut a ripe tomato without first piercing skin with the tip.
    This is junk - not worth a dollar.

    I work in a healthcare kitchen and needed a new chef''s knife. Since I don''t like to leave expensive knives laying around my kitchen and don''t want the bother of carrying my knives back and forth, I was looking for a decent knife at a decent price. I own some incredibly expensive knives and take kitchen cutlery very seriously so I was surprised when this knife far exceeded my expectations and lived up to the hype surrounding it. I acclimated to it quickly and it performs beautifully with the basic everyday tasks I use it for. Slicing raw meat, even bacon, is effortless. Veggies don''t stand a chance. It''s definitely not the work of art that my Miyabi is, but it''s a functional workhorse at a steal of a price. I''d buy it again and would be proud to give it as a gift.

The blade is sharp, handle looks boring but the slightly rough texture means I can grip properly even with wet hand. The best part is how balanced it is. It feels light and agile and the weight is distributed evenly so I can chop away with confident. A minor cons is that it came encased in a plastic package with no blade guard but that''s just nitpicking.

It''s very hard to explain how much this knife is WORTH THE MONEY! Everytime I cut something, it just glides right through it. I don''t even need to put any pressure on it. I used to have a hard time cutting potatoes, now it''s just so satisfying and nice. I couldn''t be more happy. I always clean it by hand and dry it, as written on the package.

    The Gold Standard for a Chefs Knife

    Let''s be honest, it''s not the prettiest knife on the block (pun so intended), but it''s not meant to be; everything about the knife screams "workhorse knife for professional kitchens" and if it''s good enough for the pros then it''s good enough for me. The handle is tapered in at the end which moves your fingers into a natural pinch grip, and it''s made of a textured plastic material so that if your hands are wet the knife won''t slip around. Victorinox also chose to stamp the blade and use a soft steel (55HRC). The downsides are the knife doesn''t feel as hefty (not always a bad thing) and that it doesn''t keep an edge as long (i.e sharpen/hone more often) but the upside is it''s less brittle. If you dropped this knife on it''s tip, the tip would just bend and you could bend it back, while with a harder steel the tip would just break off. The knife arrived razor sharp, cuts through everything like butter and it makes me enjoy cooking that much more. Eventually though, the knife will dull ,and that doesn''t mean it''s time to get another one! it''s time to sharpen it. I suggest learning how to sharpen with a whetstone (buy the shapton 1k if you do) but if you don''t have the time or care, get a nice manual pull through sharpener. Electric sharpeners will also work but it''s like $200 for the one''s that don''t strip away tons of metal. If you get a honing rod (no diamond/grooved. only smooth steel or ceramic) and use it at least once a week you shouldn''t have to sharpen the knife more than twice a year! The only issue I have with this knife is when you''re finely chopping, things will stick to the blade. Overall, fantastic value for what you get. If you''re not fussy about looks or a knife nerd (like me), this could be all the knife you need in your lifetime. If you want this knife but prettier, you can find the Victorinox Modern Swiss Knife online which has a sleeker handle (and a gorgeous walnut handle version).
